Healthy Sweet Potato Jacks

Our love of sweet potato jacks dates back to my grandmother who made extraordinary jacks. She made apple , cherry, strawberry and sweet potato which is my favorite. We attempted to make a low carb version of this but the taste and texture was just not there. These morsels are about 10 carbs a piece. Good for modified carb diets, maintenance and healthy eating plans.

Dough

1 1/2 cups of whole wheat pastry flour

1 egg

1/2 cup of cream or coconut milk (more if needed)

1 teaspoon of salt

1/4 cup of your favorite sugar substitute

Filling

1 small sweet potato baked

1/4 cup of brown sugar substitute

1/2 cup of sugar substitute

1/2 teaspoon of cinnamon

1/4 teaspoon of nutmeg

1 cup of oil ( We used safflower oil. Do not use olive oil.)

Combine all ingredients until you have a soft pliable dough. Roll out the dough to about 1/8th of an inch. Cut 4 inch circles.

Filling

Combine all ingredients. Taste to make sure the sweetness is to your liking. Add 1 T. of filling to each circle.

Fold over then seal by pressing a fork around the edges. Put jacks in the refrigerator. In a heavy bottom frying pan heat oil to 310 degrees. Fry about 4 jacks at a time. turn often. Cook until golden brown.
