Chicken Thighs With Artichokes

As you all know by now I love chicken.  I though artichokes olives and fire roasted chilies would be a nice take on my standard pot chicken.  This is a one pot dish so relax and enjoy.

Chicken Thighs With Artichokes

Prep Time: 12 minutes

Cook Time: 60 minutes

Yield: 4

Ingredients

  • 4-6 chicken thighs with skin
  • 3 T. of Montreal Chicken seasonings
  • 1 T. of granulated garlic
  • 2 cans of artichoke hearts
  • 2 T. of extra virgin olive oil
  • 2 T. of organic palm shortening
  • olives

Instructions

  • Preheat oven to 350 degrees.Heat oil and shortening to medium heat in a oven safe frying pan. Clean and dry chicken. Sprinkle seasoning generously on chicken. Place chicken in pan skin side down. Cook 10 min. on each side. Transfer pan to oven bake for 10 min. then add the artichokes, olives and chilies. Bake for another 15 – 20 or until done.
